Elena Carrasco Jiménez graduated with a BSc in in Food Science and Technology from the University of Cordoba in $2001$. She obtained the University Expert degree in Advanced Methods of Applied Statistics from the National Distance Education University in $2006$. In $2007$ she obtained a doctorate in Food Microbiology from the University of Cordoba. She is currently working as full professor in the Nutrition and Food Science area of the department of Food Science and Technology of the University of Cordoba. She is researcher of the Andalusian Technological Centre for the Meat Sector (TEICA) from $2011$. Her main research activities focused on the development and application of microbial predictive models and microbial risk assessment in vegetable and meat products, shelf-life establishment and food quality.
