This demonstration showcased innovative bio-intervention strategies for naturally controlling pathogens and extending shelf-life of Portuguese artisanal fermented foods. Participants were explained the role of biopreservatives in regional foods and their health benefits; the action of biopreservatives against fastidious bacteria; and the innovative quality monitoring tools available for this industry. This one-day demo attained the parallel objective of further promoting the valorisation of artisanal products in the Portuguese society.
